About using this technique for a cover one day, I like to keep the style of my cover art and interior art congruent. I'm always annoyed by the instant let down of picking up a comic book because of it's strong, fully color painted cover, only to find black and white interior art that just does not match in quality. That's one of the reasons I chose to have a black and white cover for Table for One, to reflect the interior. But different stories require different considerations and my next book will illustrate that.
